Raspberry and White Chocolate Muffins

Being a huge sweet tooth I always need to think up new ways of maintaining my low fodmap diet and still being able to enjoy sweet treats to help with the sugar cravings. Tonight I whipped up some super easy raspberry and white chocolate muffins. 

Raspberry and White Chocolate FODMAP Friendly Muffins 



Prep time: 10min, Oven time: 20-25min 

Ingredients: 

Makes 12

2 cups of gluten free self raising flour
1 cup caster sugar
1 egg
1/2 tsp vanilla essence 
1 cup milk (use lactose free milk or almond milk if lactose intolerant)
50g butter, melted (use a lactose free substitute if need be)
1 cup frozen raspberries, thawed
1 cup of white chocolate, roughly chopped

Steps:

1. Preheat oven to 180 degrees C. Place 12 large patty cases into a muffin pan. 

2. In a large bowl, sift together the flour and sugar. 

3. In a small bowl, whisk together egg, milk and butter. Add this liquid mixture to dry ingredients.  Add the vanilla essence. Once combined, fold through the raspberries and chocolate

4. Distribute the batter between patty cakes and bake for 20-25min, or until a skewer comes out clean and muffins are golden.

  1. How is this receipe fructose friendly. There is over 10gms per serving of fructose without even adding in the white chocolate. It must be less than 3 gms per serve to meet the criteria.

      I have not been told about certain amounts of grams per serve of fructose to meet criteria of fructose friendly. If this is what you have been told then that is what you should follow, but I do see a dietician and have not been told anything along these lines. I have been cutting out foods I cannot have and keeping the ones I can have.

      I personally can tolerate raspberries and white chocolate, and have not had a problem with this recipe.
      It is also important to note that everyone with Fructose Malabsorption has different tolerance ranges which makes it such a difficult disorder to deal with.

      I never pretend to be a dietician or that I know everything about FM, if this recipe is not suitable for what you can and cannot tolerate, then do not use it.

      Please also note that if you are eating fructose friendly as a diet rather than because you have IBS these recipes may not be suitable for you.

      If you you can point out where I can find more information regarding the amount of grams per serve of fructose in a meal I would be more than happen to read this and take your advice on board.
